dc.description.abstractBased on the results obtained from the study of 90 days duration, it is clear that spray drying technique is effective to recover water-soluble proteins from surimi leached-water. The study showed that there is scope of recovery of about 3% mineral-rich, stable functional protein from the leached water using spray drying technique.en_US
