    Level of Knowledge of Brackishwater Shrimp Farmers about the Improved Practices in Shrimp Farming

    The study was undertaken to ascertain the level of knowledge of brackishwater shrimp farmers about the improved practices in shrimp farming in the State of Kerala and to find out the relationship of socio-psychological and economic characteristics with level of knowledge. A group of 100 shrimp farmers from six maritime Districts of Kerala State viz., Kollam, Alappuzha, Ernakulam, Thrissur, Kozhikode and Kannur was selected using Proportionate Random Sampling technique which constituted the sample for the present study. The results of the study show that majority of the respondents possessed medium level of knowledge (93%). Only five per cent of the farmers possessed high level of knowledge while two per cent had low level of knowledge in brackish water shrimp farming. Age, occupation, experience, annual income, farm- size, and indebtedness showed non - significant - association with level of knowledge of brackish water farmers whereas, education, information source utilization, risk orientation, social participation, marketing orientation and extension participation were positively and significantly correlated.

    Analysis of Urban Consumer Behavior for Fish in Tripura

    The consumer behavior towards fish consumption in Tripura is studied to analyze income and expenditure patterns of fish consumers' in urban area of Tripura and to examine consumers ' purchase and usage habits for fish. For the collection of data on households' income and expenditure, consumption of animal proteins and consumers' attitude towards fish consumption, 80 respondents were randomly selected from Agartala city, using cluster sampling technique. The information on income and expenditure of households, consumption pattern of fish and other non-vegetarian items and attitude towards fish consumption were collected through personal interview. The per capita fish consumption of fish in study area is higher than the consumption c chicken and mutton. The fish consumers prefer small sized, live/fresh and locally produced fish. The market prices of locally produced fishes are almost double than the fishes arrived from other states.

    Optimization of gelatin extraction from the skin of freshwater carps by response surface methodology

    Response Surface Methodology (RSM) was used to determine the optimum operating conditions for extracting the gelatin from the skin of three species of freshwater carps viz., Rohu(Labeo rohita), Common Carp (Cyprinus carpio) and Grass Carp (Ctenopharyngodon idella). From the screening experiments, four independent variables viz., alkali pretreatment concentration, acid pretreatment concentration, pretreatment time and extraction temperature were identified as the critical variables that had significant effect on the extraction of gelatin from the skin of these species. The responses studied were gel strength and yield. The optimum gelatin extraction conditions from the skin of three species based on the responses were 51.35 minutes (pre-treatment time) and 49.33C (extraction temperature) for Rohu skin; 60 minutes (pre-treatment time) and 57.97C (extraction temperature) for Common Carp skin; 60 minutes (pre-treatment time) and 40C (extraction temperature) for Grass Carp skin. The gelatin from the skin of the freshwater carps showed high yield, medium gel strength and high viscosity.

    Functional properties of fish proteins : a review

    Proteins possess a number of physiochemical characteristics which facilitates their varied food applications. Proteins exhibit a wide range of functionality and versatility during processing. Functional properties of proteins are mainly due to its interaction with other components within the food system. The structure of protein is highly dependent upon the environment and protein assumes different conformations depending upon the conditions of exposure. The surface hydrophobicity plays a major role in the functional properties of a protein and changes in the inherent characteristics influence protein structure which have profound influence on the functional properties of the protein.
