Abstract
The phenomenon of rigor mortis, autolysis in fish, microbial spoilage, energy systems, hypoxanthine and K value, marine lipids oxidation, gas chromatography,polycrylamide gel electrophoresis, mercury analyser, flame spectroscopy, electro microbiology, bacterial examination of fish, salmonella identification, detection of staphylococcal entrotoxins,protein quality evaluation, histamine in fish, aflatoxins, bacterial food poisoning, etc. are discussed.
