Abstract
Cleaning and disinfection operations are integral parts of food production. Product quality will be greatly affected if these operations are not carried out properly. During cleaning operations, soil is removed by applying detergert The presence of soil decreases the efficiency of disinfectants. The cleaner the surface, the more effective will be the disinfectant. Disinfection should follow immediately after cleaning.
