Abstract
Intermediate moisture foods (IMF) generally contain 20-50% moisture with water activity between 0.7 and 0.85. There is considerable focal interest at present at the adoption of intermediate moisture phenomena for the production of various intermediate moisture items for military and space flight personnel.
