Abstract
A large number of value added and diversified fish products both for export and internal market based on shrimp, lobster, squid, cuttlefish, bivalves, farmed fish and minced meat from low priced fish have been identified. A brief description of a few of such products, the technology for their production is readily available, is presented. The need to adhere to upgraded international quality yardsticks such as the EU Standards, requirements of HACCP and IS0-9000 series in fish processing establishments is stressed.
